docs: Collapse mac-ops Recent Updates (10 versions -> 1), condense windows-ops

mac-ops shipped across 10 granular version bumps (v2.7.0 -> v2.8.0), each
spawning its own Recent Updates block — including pure bugfix entries that
violate the "features not bugs" rule. Collapse all 10 into one salient
v2.8.0 entry; condense the verbose windows-ops v2.6.0 entry to a tight peer.
